It couldn't be easier to warm yourself up this winter with a spiced, warming glass of this mulled wine. This recipe combines the fruity flavours of orange with subtle aromatic spices to create a delicious, warming tipple. It is easily doubled or tripled so can be catered to a beautiful evening hanging out with a group of family and friends.

WHAT YOU NEED
750mL bottle of red wine (Merlot is a good bet) - we've used Tora Bay Premium Merlot here
2 thick slices of a medium orange including the rind
1 tablespoon roughly chopped ginger
1 large cinnamon stick or 1 teaspoon ground cinnamon
2 star anise
4 whole cloves
5 cardamon cloves, crushed
1 ½ tablespoon maple syrup
Additional sliced oranges and cinnamon sticks (optional - for serving)
METHOD
Add a cup of water into a medium pot and add all the ingredients except the star anise and red wine.
Bring the water to a boil, then reduce the heat to a simmer for 6-8 minutes until the water has nearly evaporated (about ¼ cup left in the pot).
Reduce the heat again, and add the red wine and star anise. Warm the red wine through for a few minutes.
Strain (if you want) and serve and add sliced oranges and cinnamon sticks as decoration.
