RECIPE: Orange Aperol Sun


It’s 6 p.m. on a late spring Friday. Golden hour is nigh. We probably need something stronger than lemonade but it’s too early for scotch – it’s aperitif time on the dot. 

Italy has been perfecting aperitif hour for decades, and the popular Orange Aperol Sun is the perfect example. It’s an Italian spin on the Mimosa and possesses a unique flavour from the Italian liqueur made from bitter oranges, rhubarb and herbs. Combine that with Italian Prosecco (like Bosco dei Cirmioli Prosecco!) and you have an effervescent, extremely well iced aperitif that we can definitely get behind!

WHAT YOU NEED

750mL bottle Prosecco (we've used Bosco Dei Cirmioli Prosecco here), chilled

6 tablespoons Aperol

6 tablespoons fresh orange juice, chilled

Thin orange slices (for garnish)

Ice cubes 

METHOD

Fill 2/3 of a wine glass with ice cubes and add 1 tablespoon Aperol and 1 tablespoon fresh orange juice. Top it off with 1/2 cup Prosecco and garnish with thin slices of orange. The recipe should yield 6 glasses if you want to make all 6 at the same time!
